This will be the first Valentine’s Day where my husband and I both are completely keto-fied, so I had to find the perfect keto dessert recipe for the special day. I scoured Pinterest to find a keto recipe that would 1) taste good 2) look pretty 3) be festive. It also had to be something my husband actually liked! These Keto Toasted Almond Cookies turned out great.
My first attempt at a dessert was a complete Pinterest fail. I found this pin for 25 Keto Desserts for Valentine’s Day. Scrolled down until this Berry & Vanilla Jello Ring recipe caught my eye. I thought…Jello = easy peasy, right?! Well, let’s just say my Jello dessert did not turn out quite as glass-like and beautiful as theirs. It did not taste too appealing either! Enter the Keto Toasted Almond Cookie.
It was back to the drawing board. In my search, I stumbled upon the most amazing keto-fied recipe site called Gnom-Gnom run by Paola. Her recipes are all gluten-free, ketogenic, and paleo friendly. She even has cereal recipes! She really takes the time to include all the details you need for a recipe. As I scrolled through the dessert section, these heart-shaped cookies jumped out at me! This was the one!
Here is my attempt at making these adorable Keto Toasted Almond Shortbread Cookies.
The key is toasting the almond flour until golden brown! Who knew? Your kitchen will smell ridiculously aromatic after whipping up this perfect Valentine’s Day treat. Another Valentine’s Day favorite are these Keto Chocolate Flaxseed Muffins. Bake in a heart shaped silicone pan for extra cuteness. Perfect for breakfast in bed!

- ½ teaspoon xanthan gum
- ¼ teaspoon kosher salt
- 6 tablespoons grass-fed butter, at room temperature
- 6 tablespoons Swerve Confectioners Sweetener
- ½ teaspoon vanilla extract
Additional toppings (optional):
- dark chocolate, such as Lily’s, melted
- Maldon Sea Salt Flakes
