    If you've got strawberries and cream cheese, you've got everything you need to make these frozen little bites of joy. These keto strawberry ice cream bites taste like a no-bake strawberry cheesecake that went straight into the freezer and came out even better. They're creamy, a little tangy, and just sweet enough to hit the spot. No ice cream maker, no oven, no drama. Just mix, freeze, and enjoy. Perfect for summer, meal prep, or when you want a cold treat that doesn't require a full dessert situation. They double as fat bombs too.

    3 Ingredient Keto Strawberry Ice Cream Bites Recipe

    This recipe actually comes from one of my most popular fat bomb posts from way back in 2018. It's been saved, shared, and remade more times than I can count, probably because all of the recipes are only 3 ingredients. So I figured it was time to give it a little glow-up. Same simple 3 ingredients, just reworked slightly to feel more like ice cream than a traditional fat bomb.

    Instead of stressing over whether it's setting up just right, I kept things easy. No extra steps, no fancy equipment. You mix everything in one bowl, spoon or pipe into silicone molds, and freeze. That's it. They come out creamy and perfectly sweet straight from the freezer.

    I used a hot cocoa bomb mold for this batch, but any silicone mold will work. I also tested with 24-mini muffin pan. These freeze fast and pop out clean, so they're perfect for prepping ahead and grabbing one whenever you want a cold bite of strawberry cheesecake deliciousness.

    • Strawberries – Fresh strawberries bring all the flavor here. You can swap for frozen, just make sure they're completely thawed and drained so you don't end up with a watery mix.
    • Cream cheese – This gives the bites that rich, creamy cheesecake texture. I use full-fat cream cheese, but you could try mascarpone for a milder flavor or even whipped cream cheese if that's what you have. Just avoid the spreadable kind in a tub, it's too soft.
    • Powdered sugar-free sweetener – I like using powdered allulose because it blends in smooth and doesn't get gritty after freezing. You can use monk fruit or erythritol blends too, but they tend to make the bites a little firmer straight from the freezer. If your sweetener is granular, just pulse it in a blender or coffee grinder first.

    2. Add chopped strawberries, cream cheese, and powdered sugar-free sweetener to a medium mixing bowl
    3. Mix with an electric hand mixer until smooth.

    • Can I use frozen strawberries? Yep! Just make sure they're fully thawed and drained before mixing. You don't want extra water messing with the texture.
    • Do these taste like actual ice cream? Not exactly, but close. They're creamy and cold like ice cream, but the texture is more like frozen cheesecake bites. Still totally satisfying.

    • What kind of mold should I use? Any silicone mold works. I used a hot cocoa bomb mold for the ones pictured, but mini muffin molds or even ice cube trays will do the job.
    • How long do they last in the freezer? They're best within 2 to 3 weeks for taste and texture, but honestly, they never last that long in my house.
    • Can I swap the sweetener? Yes! Just use a powdered keto sweetener you like. Allulose stays softer when frozen, but monk fruit or erythritol blends work too-they'll just make the bites a little firmer.

    These keto strawberry ice cream bites taste like frozen cheesecake with a pop of real strawberry flavor. They're creamy, cold, a little tangy, and ridiculously easy to make. Just mix, mold, and freeze. Nothing fancy and no baking. Keep a batch in your freezer for the days when you want something sweet without turning on the oven or making a mess. These make great fat bombs too!

    Ingredients

    • 1 cup strawberries , chopped (Note 1)
    • 8 oz cream cheese , room temperature
    • ⅓ cup powdered sugar-free sweetener (like allulose)

    • Chop strawberries.
    • Mix chopped strawberries, cream cheese, and powdered sugar-free sweetener in a medium mixing bowl with an electric hand mixer until smooth.
    • Spoon or pipe strawberry mixture into silicone mold. (Note 2)
    • Freeze for 1 hour or until frozen.
    • Soften slightly at room temperature before consuming.

    Notes

    1. Strawberries – 1 cup is about 4 large strawberries with the stems removed. If you use frozen, just make sure they are completely defrosted before mixing in.
    2. Silicone Mold – You can use either a 24-mini muffin or as 12 hot cocoa bomb size (pictured) silicone mold. I tested both!
    3. Nutrition and carbs – Be aware that some recipe blogs omit sugar alcohols from the nutrition calculation. I have included it and calculated the net carbs below. Always use a carb counter app like Cronometer according to the brands you use in order to get accurate nutrition information.
