    Keto & Carnivore Brown Butter Bites

    If someone eating a block of butter passed you in the streets, you might think they've gone absolutely crazy. But this ingredient is one of the key staples on the carnivore diet - a diet where you consume only animal products boasting anti-inflammatory health benefits.

    During my research, I wondered...what does someone on the carnivore diet eat for desserts around here? It turns out that desserts and snacks aren't really part of the whole carnivore diet vibe, but it's acceptable in moderation. There are cakes, cheesecakes, ice creams, custards, and yogurts that are all acceptable to eat on the carnivore diet.

    When I looked deeper into the real people forum boards, I found these beauties: brown butter bites. A one-ingredient dessert or snack that could be made in minutes. I jumped at the chance to make it myself, put it in cute silicone molds, and share it with you all!

    These also make great fat bombs for those following a keto diet. If this sounds amazing, read on!

    Ingredients in Brown Butter Bites

    1. Salted or Unsalted butter (preferably grass-fed) - It's the only ingredient! You can use salted and unsalted butter depending on your palate. I chose unsalted in case I wanted to experiment with adding my own salt or flavor enhancers like Keto Chow. Using grass-fed butter enhances the dish with a richer, creamier flavor and boosts its nutritional value with higher levels of omega-3 fatty acids - healthy fats , vitamin K2, and antioxidants. The quality of grass-fed butter can also improve the cooking process, offering a better browning experience without easily burning. It's totally okay to use regular butter. No judgement here!

    Equipment Needed for Brown Butter Bites

    1. Silicone molds (candy molds) - You need a non-stick surface for your brown butter bites. What better way to create a 1-ingredient snack than adorable silicone molds with different patterns? If you don't have the cutesy stuff, you can stick with an ice cube tray, mini muffin tins, flexible plastic molds, parchment paper cups (make your own molds out of parchment paper), or a shallow baking sheet or pan where you can cut into bite-sized pieces out of the freezer.
    2. Squeeze bottle - This helps cut down the mess and provides precise pouring of the liquid molten hot lava butter into the molds. Perfect bites every time!
    3. Milk Frother (optional) - These aren't just for coffee, you can whip up this butter for a different flavor if you like easily with a milk frother.

    How to Make Brown Butter Bites

    Let's get into how to make this 1-ingredient caramel-like carnivore dessert.

    It's a nice leisurely recipe, but there are some expert tips here that will help you make the best possible brown butter bites without burning them.

    1. Melt cubed butter in a medium sauce pan over medium heat. Stir occasionally to prevent burning.
    2. Continue cooking and stirring about 5-8 minutes as the butter milk solids that gather at the bottom of the pan transitions from a foamy phase....
    3. ...to a golden hue...
    4. ...then finally to a toasty brown. Once it has reached this color, remove the saucepan from the heat immediately.

    Since it will continue to brown as the butter sits, it's best to pour the browned butter into a squeeze bottle right away, then deposit about a tablespoon of liquid into the silicone molds. Careful, it might be a little hot to work with.

    Once you have poured all the brown butter, place in the freezer for about 15 minutes to firm up. Then, take them out of the freezer, pop them out of the silicone mold, then enjoy or store in an airtight container in the fridge for 2 weeks or freezer for up to 3 months.

    Variations of Brown Butter Bites

    If you don't want to see the brown bits and would rather whip up these bites, use a milk frother right after removing the brown butter from the heat. Place in small glass container or measuring cup, then whip up for about 2 minutes or so. Then, pour into the silicone mold as usual. The butter mixture will actually solidify faster when whipped so it will be ready in no time at all. If you like room temperature butter, this way is faster.

    Now, how to enhance this culinary experience that involves a stick of butter? You can add any number of flavors to the liquid butter before it cools! Try adding bacon bits, cream cheese, protein powders, sugar-free white chocolate, vanilla extract, heavy cream. No one can tell you how to enjoy these delectable little bites. So go ahead and make it the way you like!

      I have a stainless steel 2 TBSP spoon that perfectly scoops this into the silicone mold and it is really easy. Very round spoon (like a 1/2 golf ball) so you scoop and roll and it just perfectly fills my molds. These are wonderful. Maybe not carnivore, but at the final stir I do put some english toffee stevia drops in and stir very fast because they bubble up

      Just a warning...the hot-off-the burner butter can melt plastic. I didn't have a squeeze bottle, so I used a turkey baster, and it melted and deformed within seconds. Let the butter cool considerably before letting it contact plastic.
