Keto Chocolate Chaffle
Waffles are great. But chaffles are even better. Because they’re easy to make, portable, and meal preppable, plus low carb, low sugar and packed with protein. Designed to keep that sweet tooth in check while on the keto diet.
Is this the first you’re hearing about chaffles? Well, I hope you don’t immediately close this tab when you hear they’re made with cheese and eggs! Get it, cheese waffle = chaffle? Don’t worry, they don’t taste eggy or cheesy at all. Especially since this recipe calls for cream cheese – hey, it’s technically still cheese!
Chaffles not only make great a breakfast and dessert, they are so versatile, you can make savory ones – even bread replacement ones – that make great additions to a work lunch or dinner.
About the dash mini waffle maker
To make chaffles – or waffles for that matter – you need a waffle maker. There really isn’t any getting around that. This powerful kitchen appliance is designed to cook waffles by providing heat from both above and below in a unique grid pattern. This pattern gives waffles their distinctive shape with deep pockets and a crispy exterior.
Mini waffle makers work just like their larger counterparts but are designed to produce smaller waffles, typically around 4 inches in diameter. These compact appliances are perfect for small kitchens, dorm rooms, or for anyone looking to make single-serve portions. Despite their size, mini waffle makers still offer the same functionality as full-size models, heating up quickly and providing that crispy exterior and fluffy interior that waffle (and chaffle!) lovers crave.
Not all waffle makers are the same! For chaffles, the Dash mini waffle maker wins the day. If you want to have a full-sized waffle, you’ll have to double the recipe and cook it in one of these Cuisinart classic waffle makers.
Ingredients in Keto Chocolate Chaffle
Simple ingredients are the key to making the perfect chaffle. You might have most of these sitting in your house right now!
- Softened Cream Cheese – Adds moisture, richness, and helps create a tender texture in the chaffles. You can also use other neutral cheeses like hand-shredded mozzarella cheese. I promise you won’t taste the cheese!
- Egg – Acts as a binder for all the ingredients, ensuring they stick together and form a batter. Eggs also contribute to the chaffles’ fluffy texture and are a key source of protein.
- Unsweetened Cocoa Powder – Provides the rich chocolate flavor essential to this recipe. Using unsweetened cocoa powder instead of actual chocolate keeps the carb count and sugar low.
- Sugar-Free Sweetener – Typically I bake with Monk fruit and erythritol blends, or Monk fruit and allulose blends. You can also use Stevia. I highly recommend using a sugar-free sweetener blend for best results. This is a natural sweetener that won’t impact blood sugar. Add a little bit of sweetness.
- Coconut Flour – A low-carb, gluten-free flour that helps thicken the batter without adding too many carbs. You can also use almond flour. I usually stick with coconut flour for most recipes for those with nut allergies and to keep it school-friendly. Psyllium husk powder and crushed pork rinds (pork panko) make other great flour replacements in keto chaffle recipes.
- Vanilla Extract – Adds depth and enhances the overall flavor of the chaffles. Vanilla complements the chocolate taste and rounds out the sweetness.
How to Make Keto Chocolate Chaffle
- Place the cream cheese in a small bowl, then whip with a fork to lighten it.
- Beat in the egg.
- The batter should look very smooth before adding the rest of the ingredients.
- Add unsweetened cocoa powder, sugar-free sweetener, coconut flour, and vanilla extract, then mix very well until a smooth waffle batter forms. You could even mix in a few sugar-free chocolate chips into the batter at this point to make chocolate chip chaffles.
- Ladle or use a ¼ cup to add half of the batter to the mini waffle maker.
- Cook for about 3 minutes until it gets crispy. You can always pop it in the toaster, toaster oven, or air fryer to crisp it up even more if you like it Eggo waffle style.
Remove from the mini waffle maker with a small spatula. Serve as you go or place on a cooling rack. Then, top with your favorite toppings like homemade whipped cream, more unsweetened cocoa powder, fresh fruit, peanut butter, or sugar-free chocolate chips (Lily’s chocolate chips).
You could even make a little chaffle ice cream taco with this thing!
Variations and Storage
Storage
- Refrigerator: Once cooled, place the chaffles in an airtight container or plastic bag. They can last in the fridge for up to 4 days. This method helps retain their moisture and ensures they stay fresh.
- Freezer: For longer storage, freezing the chaffles is the best option. Wrap each chaffle individually in plastic wrap and then place them in a Ziplock freezer bag or an airtight container. Make sure to squeeze out as much air as possible to prevent freezer burn. They can be stored in the freezer for up to 3 months. Label the bag or container with the date, so you keep track of how long they’ve been stored.
Reheating
- Toaster or Oven: To revive the chaffles to their original crispiness, reheat them in a toaster or an oven preheated to 350°F (175°C) for a few minutes until they are warm and crispy again. This method is preferred over microwaving, which can make them soggy.
- Microwave: If you’re in a hurry, you can microwave them for a quick reheat, but be cautious as this method can make them soft rather than crispy. A few seconds to a minute should be enough, depending on the microwave.
Variations
This is such a versatile recipe that there are any number of variations and ingredient swaps you could do to make some fun chaffle experiments. One of my favorite variations is Oreo chaffles, where you swap out the unsweetened cocoa powder for black cocoa powder, then make a cream cheese filling. It’s the best little keto dessert. So good!
Another good one is double chocolate chaffles! Add sugar free chocolate chips to the mix, and double the cocoa powder. It’s next level.

Ingredients
- 1 ounce cream cheese , softened
- 1 egg
- 1 tablespoon cocoa powder , unsweetened
- 1 teaspoon coconut flour
- 1 tablespoon sugar-free sweetener
- ½ teaspoon vanilla extract
Instructions
- Whip cream cheese with a fork in a small bowl. (Note 1)
- Beat in egg.
- Mix in cocoa powder, coconut flour, sugar-free sweetener, and vanilla extract.
- Preheat mini waffle maker. Spray with oil.
- Ladle approximately half of batter to just cover the iron. (Note 2)
- Cook about 3 minutes until desired crispiness. (Note 3)
