Keto Strawberry Ice Cream Bites

These keto strawberry ice cream bites taste like frozen cheesecake with a pop of real strawberry flavor. They're creamy, cold, a little tangy, and ridiculously easy to make. Just mix, mold, and freeze. Nothing fancy and no baking. Keep a batch in your freezer for the days when you want something sweet without turning on the oven or making a mess. These make great fat bombs too!

Instructions

  • Chop strawberries.
  • Mix chopped strawberries, cream cheese, and powdered sugar-free sweetener in a medium mixing bowl with an electric hand mixer until smooth.
  • Spoon or pipe strawberry mixture into silicone mold. (Note 2)
  • Freeze for 1 hour or until frozen.
  • Soften slightly at room temperature before consuming.

Notes

1. Strawberries - 1 cup is about 4 large strawberries with the stems removed. If you use frozen, just make sure they are completely defrosted before mixing in.
2. Silicone Mold - You can use either a 24-mini muffin or as 12 hot cocoa bomb size (pictured) silicone mold. I tested both!
3. Nutrition and carbs – Be aware that some recipe blogs omit sugar alcohols from the nutrition calculation. I have included it and calculated the net carbs below. Always use a carb counter app like Cronometer according to the brands you use in order to get accurate nutrition information.
