These keto strawberry ice cream bites taste like frozen cheesecake with a pop of real strawberry flavor. They're creamy, cold, a little tangy, and ridiculously easy to make. Just mix, mold, and freeze. Nothing fancy and no baking. Keep a batch in your freezer for the days when you want something sweet without turning on the oven or making a mess. These make great fat bombs too!
Mix chopped strawberries, cream cheese, and powdered sugar-free sweetener in a medium mixing bowl with an electric hand mixer until smooth.
Spoon or pipe strawberry mixture into silicone mold. (Note 2)
Freeze for 1 hour or until frozen.
Soften slightly at room temperature before consuming.

1. Strawberries - 1 cup is about 4 large strawberries with the stems removed. If you use frozen, just make sure they are completely defrosted before mixing in.2.
