    Keto taco bowls are basically your favorite tacos turned into a Chipotle-style burrito bowl—minus the carbs! Think of it like a deconstructed taco: swap the tortilla for cauliflower rice, pile on seasoned ground beef, and top it off with all the classic fixings. It’s quick, easy, and totally customizable. Perfect for a speedy weeknight meal or meal prep when you’re craving something flavorful but still keto-friendly and packed with protein!

    Keto Taco Bowls Recipe

    When I started working on this recipe, I was inspired by my love for Chipotle burrito bowls. They’re my absolute favorite meal—so full of flavor, totally customizable, and just plain satisfying. But I wanted to create something I could make at home that was just as good, if not better. Enter these taco bowls: packed with everything I love, like seasoned ground beef, fresh toppings, and a lime-cilantro cauliflower rice base.

    As a picky eater, I’m all about keeping things simple and approachable, and this recipe checks all the boxes. What makes it even better is how easy it is to prep everything ahead of time. You can cook the ground beef, whip up the cauliflower rice, and store them in separate containers alongside your toppings. When it’s mealtime, all that’s left to do is assemble your bowl. It’s the perfect solution for busy days when you still want a meal that’s fresh and flavorful.

    The best part? These bowls are loaded with protein and good-for-you ingredients, so you’re not just eating something delicious—you’re fueling your body too.     • Cauliflower – the base of the “rice,” cauliflower is mild in flavor, low in carbs, and packed with nutrients like vitamin C and fiber. When pulsed into rice-sized pieces, it becomes the perfect stand-in for traditional rice, soaking up all the seasonings and flavors in the bowl. Plus, it’s super versatile—you can buy it pre-riced for convenience or make your own at home.
    • Lime – fresh lime juice adds a tangy brightness that elevates the cauliflower rice, giving it that classic zesty flavor you expect from Mexican dishes. It cuts through the richness of the ground beef and ties the dish together beautifully.
    • Cilantro – a must-have for that authentic, fresh taste, cilantro gives the cauliflower rice a burst of herbaceous flavor. It complements the lime and adds a pop of color, making the whole dish look and taste more vibrant. If you’re not a fan of cilantro, you can skip it or swap it for parsley, but it really brings the flavors to life.

It cooks up quickly and pairs perfectly with the homemade taco seasoning for that bold, smoky flavor we all love. You can swap it for ground turkey or chicken if that’s more your style, but beef gives it that classic taco taste.
    • Homemade Taco Seasoning – this seasoning mix is the secret to next-level flavor. It combines chili powder, cumin, paprika, oregano, garlic, onion, cayenne, and a touch of sweetness from granulated sweetener (I used Lakanto’s Classic Monk Fruit Sweetener) for the perfect balance of smoky, spicy, and savory. Making it yourself ensures you skip the added fillers and sugar that store-bought packets often sneak in. Plus, you can tweak the spices to match your heat tolerance.

    Ground Beef

    Ingredients

    Base

    • 1 pound ground beef
    • 2 tablespoon homemade taco seasoning (Note 1 & see below)
    • 4 cups cauliflower rice (Note 2 & see below)

    Taco Seasoning

    • 2 tablespoon chili powder
    • 2 tablespoon cumin
    • 1 tablespoon sea salt
    • 1 teaspoon black pepper
    • 1 teaspoon smoked paprika (or regular paprika)
    • 1 teaspoon dried oregano (or dried cilantro)
    • 1 teaspoon garlic powder
    • ½ teaspoon onion powder
    • ¼ teaspoon cayenne pepper
    • 1 teaspoon granulated sweetener (like Monk fruit or allulose)

    Cauliflower Rice

    • 1 medium head cauliflower , riced
    • 1 lime , halved & squeezed
    • 1 tb cilantro , chopped

    Toppings

    • avocado
    • sour cream
    • cherry tomatoes , sliced
    • lettuce shreds
    • cheese block , shredded
    • jalapenos , sliced
    • guacamole
    • cilantro
    • lime

    Instructions

    Cauliflower Rice

    • Chop cauliflower into small pieces resembling rice, or pulse in a food processor until it looks like rice.

    Notes

    1. Taco Seasoning – I wanted to make sure all parts of this recipe was on one page so you didn’t have to navigate away to another recipe about the homemade taco seasoning. Please note that the taco seasoning in the recipe card above is for about 7 TB of seasoning. You only need about 2 TB of seasoning per pound of ground beef.
    2. Cauliflower Rice – To keep all parts of this recipe on one page, I have included the cauliflower rice recipe. I used about 1 cup for one serving when preparing my taco bowl, but feel free to divide your cauliflower rice in 4 equal parts if you choose. I have included the cauliflower rice with 1 whole medium head of cauliflower in the nutrition estimation. It just varies how many cups this will produce so I did my best to estimate and give my recommendation.
    3. Toppings – These are just my recommendations for toppings, but feel free to use whatever toppings you would like to add to this taco bowl. In fact, get creative and tell me about it in the comments! I did not include the toppings in the nutrition information so please do your own calculations to ensure accuracy.
    4. Nutrition and carbs – Be aware that some recipe blogs omit sugar alcohols or allulose from the nutrition calculation since it does not affect blood sugar. For transparency, I have included it and calculated the net carbs below. Always use a carb counter app like Cronometer according to the brands you use in order to get accurate nutrition information, especially for this recipe because there will be several topping and base variations. The nutrition estimation is for the bowl base only, so please calculate your added toppings for accuracy!
