I love these no-bake gluten-free desserts! I love that I can throw them together in 15 minutes with ingredients I already have. I love that most of them live in the fridge for days, so I'm not making dessert from scratch every time I want something sweet, especially on a hot summer day when the last thing I want to do is turn on the oven. When I want something chocolatey, I make chocolate truffles or chocolate bark, both use just a handful of ingredients and take almost no effort. When I want something creamy, I go straight to no bake cheesecake or strawberry cheesecake bars. And when I need something I can grab and go, I keep a batch of cookie dough bites or lemon coconut balls in the fridge all week.

Below you'll find 11 of my favorite easy no-bake gluten-free desserts. All of them are naturally gluten-free and most can be made dairy free with one simple swap. Favorite Easy No-Bake Gluten-Free Dessert Recipes

1. No-Bake Cheesecake: Beat 16 oz Cream Cheese + 1 cup Powdered Sugar + 1 teaspoon Vanilla until Smooth + Fold in 1 cup Whipped Heavy Whipping Cream + Pour into Gluten-Free Graham Cracker Crust + Chill 4 hours + Slice & Serve

2. Chocolate Peanut Butter Bars: Mix 1 cup Peanut Butter + 2 cups GF Oats + ⅓ cup Honey until Combined + Press into a Lined Pan. Melt 1 cup Dark Chocolate Chips + 1 tablespoon Coconut Oil & Pour over Top + Chill 1 hour + Slice & Serve

3. Classic No-Bake Oatmeal Cookies: Boil ½ cup Butter + 2 cups Sugar + ½ cup Milk + ¼ cup Cocoa Powder at a Rolling Boil for 60 seconds + Remove from Heat + Stir in 3 cups GF Oats + ½ cup Peanut Butter + 1 teaspoon Vanilla + Drop onto Parchment + Cool 30 minutes + Serve

5. Chia Pudding: Whisk ¼ cup Chia Seeds + 1 can Coconut Milk + 3 tablespoon Maple Syrup + 1 teaspoon Vanilla + Stir again after 10 minutes + Chill overnight + Top with Fresh Berries & Serve
