When I first made these little bites back in 2021, I had no idea what to even call them. Were they cheesecake bites? Pumpkin pie bites? I was experimenting with short recipe videos at the time, trying out quick, simple recipes that were easy to make (you know, for real life) and perfect for keto. I knew I wanted something with all the cozy fall vibes, and these definitely delivered, but I couldn't quite land on a name that captured just how tasty and effortless they were.

Fast forward a few years, and I started noticing something-I kept seeing this recipe getting saved over and over again. It wasn't even on my blog, just hanging out on my social media, and yet people loved it! I knew this recipe needed a permanent home on my blog, where I could give it the attention it deserves, including a more in-depth, step-by-step breakdown.

So here we are, revisiting this pumpkin bites recipe, but this time with a proper spotlight! I wanted to make sure everything was crystal clear-from the ingredients to the simple mixing process-because it's just one of those recipes that deserves to be in everyone's keto recipe arsenal, especially when fall rolls around.

The ingredients for this pumpkin bites recipe are super simple and easy to find-nothing fancy, just a few pantry staples that come together for the perfect fall treat.

  • Cream cheese - This is the base that gives these bites that rich, creamy texture. Make sure it's softened so it mixes easily. If you need a dairy-free option, you could try using a plant-based cream cheese, though it might slightly change the texture.
  • Nut butter - The nut butter adds flavor, healthy fats, and a bit of structure to the bites. You can use any kind-almond, peanut, or even cashew butter. If you're avoiding nuts, sunflower seed butter works just as well. That's actually what I used when I originally made this back in 2021. Tastes amazing! Make sure there is no added sugar and it's just 100% nuts or seeds. Sea salt is okay, though.
  • Granulated sugar-free sweetener - This gives the bites their sweetness without the carbs. I like using a granulated sweetener like or Monk fruit, allulose or a blend of both. If you prefer a different sugar substitute, like stevia, just make sure to adjust the amount to taste, since sweetness levels can vary. If you don't care about carbs, you can use anything you like to sweeten these, but I would stick to a granulated version. I used Lakanto's Classic.
  • Pumpkin purée - This adds that signature pumpkin flavor and a touch of moisture. Make sure you're using pure pumpkin purée, not the pumpkin pie filling, which has added sugars. If you don't have pumpkin on hand, sweet potato purée could work in a pinch, though it'll alter the flavor slightly and more carbs. I often use Libby's 100% Pure Pumpkin, or the store brand's organic version.
  • Pumpkin spice - This is where all the warm fall flavors come from. You can either use a pre-made pumpkin spice blend or mix your own with cinnamon, nutmeg, ginger, and cloves. No pumpkin spice? Cinnamon alone will still give you a cozy flavor.

For the coating, we're using a simple mix of granulated sugar-free sweetener and pumpkin spice. It adds a nice little crunch and extra fall flavor to the outside of each bite. If you want to switch it up, you could even roll these bites in crushed nuts or unsweetened shredded coconut!

These keto no-bake pumpkin pie cheesecake bites are the perfect fall treat that you can whip up in no time! With just five simple ingredients-cream cheese, nut butter, sugar-free sweetener, pumpkin purée, and pumpkin spice-you'll have little bites of creamy, pumpkin-spiced goodness ready in minutes. Ingredients

Pumpkin Bites

  • 8 oz cream cheese , softened
  • ⅓ cup almond butter (or other nut butter without sugar, Note 1)
  • ¼ cup granulated sugar-free sweetener (Monk fruit, allulose)
  • 2 tablespoon pumpkin puree (Note 2)
  • 1 teaspoon pumpkin pie spice

Instructions

  • Mix cream cheese, almond butter, sweetener, pumpkin puree, and pumpkin pie spice with an electric mixer in a medium bowl until light and fluffy.
  • Scoop mixture with a small cookie scoop (1 tbsp) or a tablespoon to form about 16 bites.
  • Coat each bite with extra sweetener and pumpkin pie spice.
  • Refrigerate about 30 minutes or until set up. (Note 2)

Notes

1. Nut butter - Make sure there is no added sugar and it's just 100% nuts or seeds. Sea salt is okay, though.
2. Pumpkin Puree – Make sure to get 100% pure pumpkin puree, not pumpkin pie mix which contains sugar. I used the store brand’s organic pumpkin puree. Libby’s works as well.
2. Chilling - These can be enjoyed right away if you don't want to wait, but if you prefer a more set-up cheesecake mouth feel, then allow them to chill in the fridge for at least 30 minutes or overnight. 
3. Nutrition and carbs – Be aware that some recipe blogs omit sugar alcohols or allulose from the nutrition calculation since it does not affect blood sugar. For transparency, I have included it and calculated the net carbs below. Always use a carb counter app like Cronometer according to the brands you use in order to get accurate nutrition information.
4.91 Total Carbs – .6 Fiber – 2.94 Sugar Alcohols = 1.37 Net Carbs per Bite or 1/16 of recipe.

    This recipe did not turn out right. After being mixed it was not able to be rolled out due to mixture resembling cake mix. I t was so thin and soupy. Would not waste time with it.!!!

      Hi Sandra, I'm sorry to hear it didn't turn out. The last thing I want anyone to do is waste ingredients on one of my recipes. A couple of things that might help troubleshoot:
      First, just to clarify the method, these aren't rolled by hand like a traditional energy bite. The video in the post shows the full process, but you use a cookie scoop to portion them, roll them gently in the cinnamon sweetener coating, then chill until firm. The mixture before chilling is meant to be soft and scoopable, like a thick cheesecake filling.
      If the mixture was truly soupy though, it could be an ingredient issue. Make sure you're using full-fat block cream cheese (I don't recommend reduced fat or spreadable), and that you're using plain pumpkin puree rather than pumpkin pie filling. It's also worth noting that pumpkin puree can vary quite a bit in moisture content depending on the brand. I developed this recipe experimenting with both my store's organic brand and Libby's. If you're using a different brand, blotting the puree with paper towels before mixing in can help. Another culprit could be too much oil in the natural nut butter. It's always best to give it a really good stir before adding to any recipe.
