    Keto chocolate-covered strawberries are a simple, low carb dessert that's perfect for Valentine's Day or any time you want something sweet without the refined sugar, plus they make a thoughtful gift for any occasion. I mean — who is going to turn down free chocolate-y strawberries. Not me! With just 3 ingredients-fresh strawberries, sugar-free chocolate, and unsweetened shredded coconut-they come together in minutes and make a great snack or dessert. Keep a batch in the fridge for a quick, chocolatey treat whenever a craving strikes.

    I originally made these keto chocolate-covered strawberries for Valentine's Day as a last-minute treat, mostly because I forgot to plan ahead. I had fresh strawberries in the fridge and a half-empty bag of sugar-free chocolate chips in the pantry-so I figured, why not? After melting the chocolate and dipping a few strawberries, I spotted a jar of shredded coconut and thought, this could be good. Spoiler: It was. The coconut added just the right amount of texture and a hint of natural sweetness, making them even better than plain chocolate-covered strawberries.

    Of course, the first batch wasn't perfect. I didn't pat the strawberries dry enough, so the chocolate slid right off a few of them (lesson learned). I also tried skipping the coconut oil at first, but the chocolate ended up too thick to coat the berries smoothly. A little tweaking and some trial and error later, I had the perfect combination-silky, chocolatey, and just the right amount of crunch from the coconut.

    Now, these have become a go-to treat, not just for Valentine's Day, but anytime I want something quick and easy. They feel fancy but take almost no effort, which is my favorite kind of recipe. Plus, they store well in the fridge, so you can make them ahead of time and impress whoever happens to be around. Or just keep them for yourself-I literally wouldn’t blame you!

    • 12 medium strawberries, washed and patted dry
    • 4 oz sugar-free chocolate chips (Like Lily's or ChocZero)
    • 1 teaspoon unrefined coconut oil
    • ¼ cup unsweetened shredded coconut

    1. Heat chocolate chips and coconut oil in microwave about 30 seconds until melted.

    1. Dip strawberries in chocolate. Set on parchment-lined baking sheet. Top with coconut.
    2. Refrigerate for about an hour to allow chocolate to fully set.

    Tips and Tricks

    • Pat the strawberries completely dry - If there's any moisture on the berries, the chocolate won't stick properly and will slide right off. After washing, let them air dry or use a paper towel to make sure they're completely dry before dipping.
    • Add coconut oil for a smooth dip - Melting the chocolate with a little coconut oil makes it easier to coat the strawberries evenly. Without it, the chocolate can be too thick and clumpy, making it harder to get that nice, glossy finish.
    • Work fast and chill immediately - Once you dip the strawberries and sprinkle on the coconut, pop them in the fridge right away to help the chocolate set quickly. If they sit too long at room temperature, the chocolate can harden unevenly or lose its shine.
