I kept seeing cinnamon cheesecake roll-ups all over Pinterest, and while they looked amazing, I couldn't help but wonder-why stop at cinnamon? The idea of a fruity, fresh version immediately came to mind, and strawberries are my favorite. They add a natural sweetness that pairs perfectly with the creamy filling, and let's be honest, strawberry cheesecake in a crispy roll up just sounds amazing.

The next challenge was making it keto-friendly while keeping that crispy, golden shell. Keto tortillas were the perfect solution, and after some trial and error, I found that air frying at 385°F gave them the perfect crunch without drying them out.

Once I nailed the technique, I knew this was a recipe worth sharing. The balance of crispy, buttery tortillas and creamy, sweet filling makes every bite feel special-without a ton of effort. They remind me of something you'd find at a café, but made at home in just minutes. Plus, they're easy to customize!   • 4 oz cream cheese, softened
  • ¼ cup powdered sugar-free sweetener (like Monk fruit or allulose)
  • ¼ cup strawberries, chopped
  • 2 tablespoon butter, melted

Step By Step Instructions

  1. Chop the strawberries into very small pieces.

Tips and Tricks

  • Use the Right Tortillas - Not all keto tortillas crisp up the same way! Look for ones that are soft and pliable, like La Banderita or Mission, so they roll easily without cracking. If your tortillas feel stiff, warm them for a few seconds in the microwave to make them more flexible.
  • Don't Overfill - A little filling goes a long way! Too much can cause the roll-ups to burst open in the air fryer, making a mess instead of a perfect crispy bite. Stick to a thin layer of cream cheese mixture and keep the edges clean for the best results.
  • Flip Halfway for Even Crisping - The air fryer works best when everything gets equal heat. Flip your roll-ups at the 5-minute mark to make sure both sides turn golden and crispy. If your air fryer runs hot, check them a minute early to prevent over-browning.
