Protein ice cream is my favorite meal or snack once summer hits. A cold, creamy pint beats another shake every time, and it does actually fill me up.
This one is inspired by Eton mess, a classic British summer dessert made with crushed meringue, whipped cream, and fresh strawberries. I used strawberry cream protein powder as the base and added lemon meringue and cheesecake powder to get that meringue-and-cream flavor combo. I made this while I was testing new flavors for my Ninja Creami protein ice cream collection, along with this orange creamsicle.
A splash of heavy cream in the base before spinning makes the texture so smooth and creamy. This batch only needed one spin. Let the frozen pint sit out for about 20 minutes before spinning for best results, then top with fresh strawberries and a little whipped cream. Ingredients
Here's what you'll need to make this strawberries and cream protein ice cream:
- Strawberry cream protein powder - The base of the pint and where most of the strawberries and cream flavor and protein come from. Use your favorite strawberry protein powder.
- Lemon meringue protein powder - Just a tablespoon, to bring in that bright meringue note from a classic Eton mess.
- Cheesecake powder - I use Flavor God Cold Stone Cheesecake for a creamy, lightly sweet flavor.
- Freeze-dried strawberry pieces - Little bursts of concentrated strawberry through the ice cream.
- Heavy cream - Texture and healthy fats. Swap in unsweetened almond milk or another low carb milk for a lighter version.
- Water, room temperature - The liquid base that sets the ratio for a creamy spin.
Equipment needed: Ninja Creami, of course! See tips below for how to make it without one.

- Add all the ingredients to a blender bottle or blender.
- Blend until completely smooth. Or, shake, shake shake!
- It should look smooth like this when blended.
- Pour the mixture into your Ninja Creami container and cover.
- Freeze for 8 hours or overnight. It'll look like this when you get it out of the freezer.
- Add the frozen cup to the Ninja Creami base.
- Add liquid. Just a splash of heavy cream or unsweetened almond milk before spinning = so creamy.
- Spin (and re-spin, if needed) Lock the container into the Ninja Creami, and run the Lite Ice Cream or Sorbet setting.

Top and serve. Add any mix-ins or a little sweetener to taste, then finish with fresh strawberries and whipped cream.

Top Tip
After freezing, let the pint sit on the counter for about 20 minutes then add a splash of liquid before you spin. Mine was creamy after one spin, but if yours comes out crumbly, add another splash of liquid and respin until smooth.
Variations
- Lower the carbs. Leave out the cheesecake powder, the freeze-dried strawberries, or both. You still get plenty of strawberries and cream flavor from the base.
- Change the flavor. Swap the strawberry cream protein powder for any flavor you like and you have a brand new pint. My chocolate protein ice cream uses the same method with a chocolate base. Or try this orange version!
- Add mix-ins. Use the 'Mix-In' button to add chopped fresh strawberries, chopped nuts, or sugar-free chocolate chips.
- Sweeten to taste. If your protein powder is not very sweet, blend a little Swerve or Lakanto Classic into the base before freezing, or stir it in at the end.

Storage
Keep any leftover ice cream in its covered Ninja Creami container in the freezer. It will freeze solid again, which is normal. When you are ready for more, let it sit out for about 20 minutes, add a splash of almond milk or heavy cream, and respin until creamy. The Ninja Creami brings it right back to a smooth, scoopable texture.
Yes. Pour the blended base into an ice cube tray and freeze. Add the frozen cubes to a food processor or high-powered blender with a tablespoon or two of almond milk or water, then blend until smooth. Eat it right away as soft serve, or freeze it for 30 to 60 minutes for a firmer scoop.
Of course. Any strawberry or vanilla protein powder works as the base. Milk or whey protein work best. The flavor and sweetness will change depending on the powder you choose, so taste it and add a little sweetener if you want it sweeter. Nutrition facts will also change too so make sure you calculate it with a food calculator like Cronometer for accuracy.
