These pecan pie protein bars have a no-bake pie crust-like base and a sticky, ooey gooey pecan caramel topping, just like the real thing. They're a sugar-free, gluten-free, and keto-friendly protein snack that's great for fall.
This is part of my protein bar series, along with my pistachio protein bars and chocolate protein bars.

I wanted to make a topping that actually tasted like pecan pie filling. That sticky, caramel-like kind with lots of pecans. This bar has a similar base as the rest of my protein bar series, but the bottom is a little thinner, more like a pie crust. Browning the butter for the topping gives it that deep caramel color and flavor.
These are great for fall snacking with no oven required. Give the bars the full hour to chill in the fridge, so the pecan topping has time to firm up completely before you slice them. I hope you love these as much as I did making them for you!

Here's a few notes about key ingredients:
- Protein powder (vanilla or caramel): I used Keto Chow's caramel flavor, which is a milk protein isolate based powder with xanthan gum, acacia fiber, and caramel flavor added for better texture and flavor. For a swap, milk protein isolate, milk protein concentrate or 80% casein/20% whey blends should work, but the texture will change slightly. Vanilla works too.
- Almond or pecan butter, warmed: Pecan butter gives it more pecan flavor, but almond butter works just as well. Warm it slightly so it stirs in smoothly.
- Liquid allulose: I used a honey-style liquid allulose in the base for the best chewy texture.
- Granulated allulose: Allulose keeps this caramel topping chewy and sticky instead of turning hard and crystallized once it cools.
How To Make
This recipe is super easy to make, and here's how to make it:
Before you get started: Warm the almond or pecan butter slightly so it's easy to stir in. Line a 9x5 inch loaf pan with parchment paper, and let it hang over the sides for easy lifting later. Measure out the heavy cream ahead of time, since the caramel moves fast once it starts bubbling.
- Mix the dry ingredients first. Stir the protein powder and almond flour together before adding anything wet. This keeps the powder from clumping once the nut butter goes in.
- Press the base firmly and evenly. It should look like a compact layer like a pie crust. A firm base keeps the bars from falling apart when you slice them.
- Brown the butter fully before adding the allulose. Let it bubble and turn a light golden color, about 2 minutes over medium-low heat. This is what gives the caramel its deep color and nutty, pie-like flavor.
- Watch the caramel closely once you whisk in the cream. It will bubble and thicken within about a minute. Allulose can burn quickly. Pull the pan off the heat as soon as the caramel turns glossy.
- Let the topping cool for a couple of minutes before adding the pecans. This keeps the caramel from cooking the nuts or thinning out too much. Stir until every pecan is coated.
- Give the bars the full hour to chill. The topping needs that time to firm up completely. If you slice too early, the caramel will ooze instead of hold its shape.
Olivia's Top Tips
- Brown the butter, don't just melt it. Letting it bubble and turn light golden is what makes the topping taste like real pecan pie caramel.
- Use granulated allulose in the topping. It's what keeps the caramel chewy and sticky instead of turning hard once it cools.
- Chill for the full hour. The pecan topping needs that time to firm up enough to slice cleanly without oozing.
- Swap in pecan butter for extra pecan flavor. Warm it first so it stirs in as easily as almond butter.
Frequently Asked Questions
This usually means the butter and allulose didn't cook long enough before you added the cream. Let the mixture bubble and turn golden first, then cook it about another minute after whisking in the cream so it can thicken and turn glossy.
I tested this recipe with allulose because it keeps the caramel chewy instead of turning hard once it's chilled. I haven't tested other sweeteners in this recipe, so the texture may turn out differently.
