This list grew out of my own 3-ingredient pumpkin cookie recipe which started as a one-off fall bake and turned into a full pumpkin habit around here. I started saving other bakers' pumpkin recipes right alongside my own, and the folder got long enough to deserve its own post.
Down below, you'll find these 25 cozy pumpkin desserts, from a tasty no-bake bites to delectable cakes, you're sure to find something perfect for Fall!
Quick Tips
- Dry your pumpkin puree for baked goods. Canned puree holds a lot of water, so blotting it with paper towels before mixing keeps cookies and bars from turning out dense or wet.
- Chill no-bake desserts the full time. Cheesecakes, mousse, and truffles need every bit of that fridge time to set up properly. Cutting it short means a softer, messier slice.
- Don't skip the spice blend. Pumpkin pie spice (cinnamon, nutmeg, ginger, cloves) is what makes these taste like fall. Straight cinnamon works in a pinch, but the blend gives more depth.
- Bake in batches for a crowd. Cookies and bars freeze well, so double a favorite and freeze half unbaked or baked. It saves a repeat trip to the kitchen closer to the holidays.

FAQ
Most of these hold up well in the fridge for a few days, and several (like the bars and cheesecakes) freeze well too. Check the storage notes on each recipe.
Pumpkin puree is just pumpkin, while pie filling already has sugar and spices mixed in. Most of these recipes call for plain puree, so check the ingredient list before you buy.
