    Pumpkin energy bites, but make them look like tiny pumpkins! 🎃 These little guys are soft, chewy, and spiced just right. Like fall coziness rolled up into a bite.

    Why This Is Made For Real Life

    No baking, no fuss, just peanut butter, pumpkin, protein powder, and a little sweet coating on the outside.

    They're high protein, low carb, sugar free, and come together in minutes, making them the perfect grab-and-go snack for fall days, Halloween parties, or just when you want something festive hanging out in your fridge.

    Ingredients

    Energy Bites

    • peanut butter or other nut butter
    • pumpkin puree
    • liquid sweetener (allulose)
    • protein powder (Keto Chow)
    • pumpkin pie spice
    • vanilla extract

    Coating

    • pumpkin pie spice
    • granulated sweetener (allulose)

    How To Make

    Step 1 – Mix it up. Grab a bowl and stir together the peanut butter, pumpkin, sweetener, protein powder, pumpkin pie spice, and vanilla. It should turn into a thick, doughy mix.

    Step 2 – Scoop and roll. Use a small cookie scoop (or a spoon if that's what you've got) and roll into little balls.

    Step 3 – Coat 'em. In a separate bowl, mix your granulated sweetener and pumpkin spice. Roll each ball around until they've got a nice sparkly coating.

    Step 4 – Make the pumpkin magic. Take a piece of kitchen twine, wrap it gently around each ball, and press lightly to create four little ridges. Pop a chocolate chip on top as the "stem."

    Step 5 – Chill and snack. Stick them in the fridge for about 30 minutes so they firm up. Then grab one whenever you need a quick, festive, high-protein bite.

    Tips and Tricks

    No twine? No problem. Use a toothpick to press little lines around the sides to mimic pumpkin ridges. Same cute look, way less fiddly. 🎃

    Switch up the stem. Don't have chocolate chips? A pumpkin seed or even a tiny piece of pretzel works perfectly on top. Adds a little crunch too!

    These pumpkin energy bites are soft, spiced, and shaped like little pumpkins. 🎃 They're high protein, low carb, sugar free, and no bake, ready in minutes for a fun fall snack!

    Ingredients

    Truffles

    • 1 cup peanut butter or other nut butter
    • 2 tablespoon pumpkin puree
    • ¼ cup liquid sweetener (allulose)
    • 1 scoop or serving or ½ cup protein powder (I used Keto Chow)
    • ½ teaspoon pumpkin pie spice
    • ½ teaspoon vanilla extract

    Coating

    • 2 tablespoon granulated sweetener (allulose)
    • ½ teaspoon pumpkin pie spice
    Prevent your screen from going dark

    Instructions

    • Combine truffle ingredients.
    • Scoop 2 tb for each truffle with cookie scoop.
    • Roll balls in sugar mixture coating.
    • Use twine to make 4 shallow indents to form ridges.
    • Top with chocolate chip.
    • Chill 30 minutes.

    Notes

    1. Protein Powder-  Feel free to use about ½ cup of your preferred protein powder of choice for this recipe, but please note it will change the nutrition facts drastically as protein powders vary from brand to brand. I use Keto Chow because it's more than a protein powder, it's a keto meal mix that provides more nutrition than just protein. It also bakes beautifully and has the best flavor variations.
    2. Sweeteners– Use what works best for your lifestyle. I typically make desserts with allulose. For this recipe, I used liquid allulose for the truffles and granulated allulose for the coating. This is natural sweetener that does not affect blood sugar or have weird side effects.
    3. Nutrition and carbs– Be aware that some recipe blogs omit sugar alcohols or allulose from the nutrition calculation since it does not affect blood sugar. For transparency, I have included it and calculated the net carbs below. Always use a carb counter app like Cronometer according to the brands you use in order to get accurate nutrition information. 
    9.74 Total Carbs – 1.73 Fiber – .05 Sugar Alcohols – 4.00 Allulose = 3.96 Net Carbs per Truffle.
