    Why Eat Soup For Breakfast?

I love breakfast soup. I love that it’s gentle on my stomach first thing in the morning, I love that I can meal prep ahead of time in my Instant Pot or slow cooker, and I love reheating a small bowl throughout the whole week. When I need something quick, I turn to miso soup because it takes 20 minutes or less with just miso paste, tofu, and green onions. When I want something filling, I make congee with a whole chicken in my slow cooker. And if I’m dealing with inflammation, I turn to bone broth-based soups because they just make me feel better.

Below, you’ll find 11 of my favorite breakfast soup recipes, organized by how much time you have. They include quick broth-based soups like egg drop soup, miso soup, and bone broth soup. Plus hearty options like broccoli soup, white bean soup, and congee. Most can be made in one pot (either on the stovetop, Instant Pot, or slow cooker), and they all keep well in airtight containers for the next day or the whole week. I hope these become your new go-to breakfast food.

Best Tips for Making Breakfast Soup Recipes

    1. Start with aromatics. Sauté your aromatics like minced garlic, ginger, or green onions in olive oil for at least a minute before adding anything else. Don’t rush this step! It’s the key to the flavor base of the soup.

    2. Use quality broth. Make your own chicken stock or bone broth, or your use your favorite high-quality store-bought broth. This is another component to the flavor base.

    3. Add even more flavor with mix-ins. Tamari or fish sauce adds umami. Coconut milk or ghee makes creamier soups. Vinegar or lemon juice balance out rich broths.

    4. Use leftover protein and veggies. I love adding proteins like leftover rotisserie chicken or poaching eggs right there in the broth. Layer in some greens like spinach, cabbage, or shredded kale. Or even throw in a can of chickpeas or lentils.

    5. Make it yours. The fact that you can customize soup in so many ways makes it even more appealing. Garnish with green onions, add extra cheese, throw in some pine nuts, and make it crunchy with crispy bacon or homemade croutons. And don’t forget to season to taste!
