    How to Make Keto 4th of July Vegetable Tray

    Start by grabbing a large rectangular tray or baking dish. This helps give you the flag shape without needing to get too precise. I used a glass 9×13 but honestly, anything wide and flat will work. You'll want to build the “stars” section first, so start in the top left corner. Slice up some black olives and layer them to make a small rectangle. Then grab some white cheese, mozzarella, Monterey Jack, or even sliced string cheese, and cut out stars using a mini cookie cutter. If you don't have one, you can totally just cube the cheese or skip the stars altogether, but they do add a cute touch.

    Next up, the stripes. For the red stripes, I used cherry tomatoes, sliced red bell peppers, and radishes. You can play around with the order, just make sure you have three red rows in total to keep the pattern right. For the white stripes, I used cauliflower florets and cucumber sticks. Try to cut the veggies into pieces that are roughly the same width so everything lines up nicely.

    Once your flag is built, you can tuck in a small bowl of ranch or your go-to low carb dip somewhere nearby. If you’re prepping ahead, store the veggies separately and assemble just before serving so everything stays crisp. It's great for cookouts, potlucks, or honestly any summer hangout where you need something easy, fresh, and festive, like Memorial Day.

    Ingredients You'll Need For This Recipe

    • 1 cucumber, peeled, then cut in half and quartered
    • 7 radishes, cut in half
    • ⅓ cup sliced olives
    • ½ slice pepper jack or other white cheese slice

    Step By Step Instructions

    1. Wash and cut vegetables.
    2. Use a star-shaped cookie cutter to cut 5 stars from the cheese.

    1. Line the tomatoes on the top of the tray, from right to left, until there's about 2 ½ – 3 inches left on the left side.
    2. Arrange the cauliflower under the tomatoes, then the red pepper slices.
    3. Fill the space on the left, next to the 3 veggies with sliced olives, then arrange the cheese stars on the olives.
    4. Line the cucumbers in two rows all the way from left to right, then the radishes under those.

    1. Refrigerate until ready to serve.

    Tips and Tricks

    Use what you have – Don't stress about having the exact veggies shown. You can swap in jicama, mozzarella pearls, zucchini sticks, or even white mushrooms if that's what you've got. It's more about the colors than the specific vegetables.

    Cut everything to a similar size – The tray looks best when the pieces are cut evenly. Aim for uniform strips, florets, or rounds so the "stripes" line up and the whole thing looks more put-together.

    Assemble close to serving time – To keep everything crisp and fresh, assemble the flag just before serving. If you're prepping ahead, store the wet veggies like cucumbers and cauliflower separately from the drier ones to keep them from getting soggy.
