Blend cottage cheese, powdered sugar-free sweetener, rum extract, and brewed espresso until smooth and creamy.
Stir inalmond flour and protein powder to cottage cheese mixture until dough forms. (Note 1)
Chill in the refrigerator for at least 30 minutes to firm up. (Note 2)
Serve with cocoa powder dusted on top, or Portion bite-sized pieces then dust with cocoa powder. (Note 3)

1. Mixing - I put the cottage cheese mixture in a new bowl after blending, then added the almond flour and protein powder. 2. Chilling - Totally optional! But makes it easier to work with if you are portioning out into bite-sized pieces. Feel free to consume immediately if you are feeling snacky.3. Serving - Use a small cookie scoop or tablespoon to portion into bite-sized pieces, or just put in your favorite bowl and dust with cocoa powder. Either way is delicious!4. Sweetener - Use your favorite sugar-free sweetener of choice such as Monk fruit, allulose, or stevia if following a keto or low carb diet. If you don't care about carbs, then maple syrup, agave nectar, or honey also make great additions to this recipe. 5. Rum Extract - Totally optional, but it gives it that authentic tiramisu taste. Or feel free to use vanilla extract, almond extract or your favorite extract of choice.6. Protein Powder - I used Vanilla Keto Chow for this recipe, but feel free to use your favorite unsweetened or sugar-free protein powder of choice.
