Notes
Make Ahead: If you want that store-bought chewy texture, they will need about an hour to set in the fridge (or 10 minutes in the freezer), plus at least overnight (up to 1-2 days) of air-drying on a wire rack.Storage: Store in an airtight container in the fridge. Let them air dry before storing for best texture.Equipment: Small saucepan, silicone fish molds (or any small silicone candy mold), and a dropper or a measuring cup with a spout for filling the molds neatly.More Tips
Use an allulose honey substitute with soluble non-imo tapioca fiber. Note this is different from just liquid allulose, maple syrup, or honey. The fiber syrup is what gives it that store-bought texture once air dried.
Taste it before adding to the molds. The mixture you pour into the molds will be exactly what it tastes like when you unmold it, so make sure it tastes good to you! You can always melt the mixture down again and add more sweetener or flavors if needed.
Get creative with the flavor. Swap the water for a sugar-free juice or add a few drops of your favorite extract.
Nutrition and carbs - Some nutrition labels omit sugar alcohols or allulose from the nutrition calculation since it does not affect blood sugar. I have included all carbs in the nutrition label above and calculated the net carbs below. Always use a food logging app like Cronometer according to the brands you use in order to get accurate nutrition information.2.97 Total Carbs – 1.24 Fiber – 0 Sugar Alcohols – 1.67 Allulose = .06 Net Carbs per gummy or 1/12 of recipe.
