Patriotic Red, White, and Blue Fruit Salad

This patriotic fruit salad is summer in a bowl. It’s packed with fresh red, white, and blue fruits, tossed in a quick lemon-honey dressing (use a zero sugar honey substitute, or real honey - whatever works best for your lifestyle) and topped with star-shaped pineapple because we’re feeling a little festive. This is the best 4th of July or summer BBQ cold side dish with the right amount of sweetness, but honestly it's good any time you want something light, sweet, and refreshing.

Ingredients

  • cup blueberries
  • 1 cup strawberries
  • ½ cup raspberries
  • 1 cup watermelon cubed
  • ½ cup pineapple cubed, plus extra for star-shaped slices
  • 2 tablespoon lemon juice
  • 3 tablespoon zero sugar honey substitute (Note 1)

Instructions

  • Start by thoroughly washing the blueberries, strawberries, and raspberries. After washing, gently pat the berries dry with a paper towel. Cut the strawberries into quarters, removing the stems. In a large mixing bowl, carefully combine the quartered strawberries, blueberries, raspberries, cubed watermelon, and pineapple.
  • In a separate small bowl, mix together the lemon juice and honey substitute. Stir well until the honey substitute is fully dissolved into the lemon juice. Pour this mixture over the fruits in the large bowl.
  • Gently toss everything together, making sure the lemon- honey substitute mixture coats the fruit evenly. Allow the salad to sit in the refrigerator for about 5 minutes to let the flavors meld.
  • Serve the fruit salad topped with the star-shaped pineapple slices and fresh mint for an extra touch of flavor and visual appeal.

Notes

1. Sweeteners – Use what works best for your lifestyle. I typically use Monk fruit and allulose in all my recipes. They are natural sweeteners that won't spike blood sugar. For this recipe, I used an allulose-based honey substitute because it helps coat the fruit well like real honey.
