Lemon Protein Bars

Lemon protein bars that taste like a lemon sugar cookie! Topped with sugar-free white chocolate and lemon zest, it's bright and citrusy throughout. Keto, gluten-free, sugar-free, and ready in under an hour. The perfect no-bake treat for spring and summer.

Instructions

  • Blend cottage cheese until completely smooth. Set aside.
  • Add all ingredients except toppings to a medium bowl and mix with a spatula until dough forms.
  • Press firmly into a parchment-lined loaf pan.
  • Melt white chocolate chips with coconut oil in microwave 15-second intervals until smooth. Spread evenly over the top. Zest lemon (if using) over the top while chocolate is still wet.
  • Chill for at least 30 minutes. Slice into 8 bars.
