These keto egg bites are the best grab and go breakfast made with fresh red bell pepper, spinach, green onion, cottage cheese, colby jack cheese and a punch of feta blended together with egg whites, they taste amazingly close to the ultra-popular Starbucks egg white bites without the cost or waiting in line.
Place a 13 x 18" / 46 x 33cm half baking sheet in oven. Fill with 1 inch hot water. (Note 1)
Grease 12 standard non stick muffin pan with oil.
Hand shred cheese.
Chop bell pepper and green onions.
Blend egg whites and cheeses until light and frothy.
Pulse spinach, green onions, and bell pepper.
Divide mixture between muffin pan holes. (Note 2)
Bake on top of water-filled half baking sheet for 30-40 minutes until the center is just set and starts to pull away from the pan.

1. Alternatively, place a 9 x 13" / 23 x 33cm baking dish in the bottom rack filled with hot water to create a steam water bath. For this recipe, I did a traditional water bath with the muffin pan sitting directly on a 13 x 18" / 46 x 33cm half baking sheet. 2. Fill about ¾ full.
