Icing

Instructions

  • Whip cream cheese with a fork in a small bowl. (Note 1)
  • Beat in egg.
  • Mix in Keto Chow, coconut flour, and sugar-free sweetener. (Note 2)
  • Make cinnamon crumble - Cut in butter, brown sugar-free sweetener, coconut flour, and cinnamon with a fork in a small prep bowl until crumbles form.
  • Preheat mini waffle maker. Spray with oil.
  • Ladle approximately half of batter to just cover the iron. (Note 3)
  • Scatter cinnamon crumbles on top of batter before closing the lid.
  • Cook about 3 minutes until desired crispiness. (Note 4)
  • Make icing - Whisk together powdered sugar-free sweetener, vanilla extract, heavy cream in a small prep bowl. (Note 5)
  • Top chaffle with icing. (Note 6)

Notes

1. Cream cheese - It’s okay to microwave the cream cheese for about 30 seconds to soften, allow to cool slightly, then whisk with a fork to lighten.
2. Keto Chow - You can use your favorite protein powder of choice as a Keto Chow substitution, or other similar sweet Keto Chow flavors.
3. Ladle batter - Place a kitchen towel and a piece of parchment paper underneath the mini waffle maker to catch any spills. 
4. Texture - If you put it on a cooling rack right out of the mini waffle maker, it will crisp up after a few minutes. The texture of these chaffles is light, fluffy, and slightly cake-like. If you like a crispy outside and the mini-waffle maker isn’t doing it for you, you can pop them in the toaster to crisp them up. 
5. Icing - Adjust heavy cream according to your desired thickness. 
6. Piping - For easy piping, add the icing to a small plastic bag with the corner snipped off or use a piping bag to top the chaffles.
7. Mini waffle maker - Dash makes the best mini waffle iron for chaffles.
8. Storage – Can be stored in the fridge for 3-4 days, then reheated in the toaster. Store in the freezer for up to 3 months. 
9. Nutrition and carbs - Be aware that some recipe blogs omit sugar alcohols from the nutrition calculation. I have included it and calculated the net carbs.
