This frozen cottage cheese bark is made with peanut butter, chocolate, and chopped nuts, plus it's low carb, keto-friendly, and high protein. It's the perfect little quick and easy dessert made in one pan and only 10 minutes of active kitchen time. Great as a summertime snack!
Blend cottage cheese, sweetener, vanilla extract, and peanut butter in a blender until smooth.
Prepare tray: Line a 18 x 13 in (45 x 33 cm) baking sheet with parchment paper.
Spread cottage cheese mixture onto the baking sheet. (Note 1)
Top with melted chocolate and use a knife to create marble effect. (Note 2)
Sprinkle on chopped nuts. (Note 3)
Freeze for 3 hours or until set. (Note 4)
Cut into squares.

1.Spreading the cottage cheese mixture - Add the cottage cheese mixture to the parchment-lined baking sheet in dollops across the baking sheet for easy spreading - almost like a doily. Spread cottage cheese evenly about ¼ inch thick with a small spatula. 2. Creating the marble effect - Add about 6 evenly spaced melted chocolate dollops on top of the evenly spread cottage cheese mixture. Use a butter knife or toothpick to carefully create the marble effect. Start from one end and "cut" through the chocolate, or use a zipzag motion and gently swirl it. Avoid overmixing as you'll want distinct swirls of chocolate. You'll need to work fast as the chocolate will start to solidify as it touched the cold cottage cheese mixture. 3. Chopped nuts - Use any type of low carb nut you have on hand such as almonds, pecans, or walnuts. I used pecans for this recipe. You can also use keto granola if preferred. 4. Freezing - It won't take long to solidify, but it's recommended to allow 3 hours of freezing time for best results. This will melt if left out of the freezer for too long (just like ice cream) so consume small pieces at a time immediately. After cutting into squares, store in a freezer bag or airtight container for up to 3 months in the freezer.5.
