Juicy chunks of salmon with tender zucchini and sweet bell peppers cooked to perfection in the air fryer. The paprika and herbs give them a savory kick, and they are ready in just 30 minutes from prep to plate. Serve them hot with your favorite dipping sauce for an easy weeknight dinner or a simple party appetizer.
Toss and marinate salmon pieces at room temperature for 5-10 minutes with 2 tablespoons olive oil, half of the salt, the paprika, and half of the dried herbs.
Toss and marinate zucchini slices and bell pepper pieces with the remaining 1 tablespoon of olive oil, then sprinkle over the rest of the salt and herbs.
Assemble the skewers by alternating salmon pieces with the vegetables on wooden or metal skewers. Preheat the air fryer if your model requires it. Place the skewers in the air fryer basket in a single layer, making sure they don’t overlap.
Cook at 360°F (180°C) for 8 minutes. Halfway through the cooking time (around 4 minutes), carefully flip the skewers to ensure even browning on all sides. Remove the skewers from the air fryer once the salmon is cooked through and slightly golden on the edges.
Notes
